I’m a huge advocate of easy to throw together dips, especially when they can be placed in the slow cooker for a completely hands off approach to entertaining family and friends.

Or, just to curb a craving for spinach dip if you love spinach :)

Spinach Dip is one of those favorites – you can pick up a pretty big tub at Costco if you are in a pinch. However, sometimes going to Costco can be more of a headache than what you are willing to endure – in this case, throw all the ingredients in your slow cooker and flip the switch on low for 2 – 2.5 hours.

The result? The most delicious, addictive spinach dip you’ll ever put in your mouth. I can guarantee it!

Slow Cooker Spinach Artichoke Dip

This dip comes together SO easily – with just a few basic ingredients, layered in your favorite slow cooker:

  • cream cheese (cubed)
  • artichokes (chopped)
  • sour cream
  • mozzarella cheese, shredded
  • spices and seasonings to include salt
  • and, finally, a layer of fresh spinach leaves

This is one of my favorite ways to use up spinach, which has a tendency to go bad quite fast if you have too much. Want to double or triple the recipe? You can definitely do that, too!

Layer all of the ingredients in the slow cooker. Then, gather your spinach and gently layer the spinach on the very top.

(This is such a great way to use a ton of spinach in a hurry – before it goes bad!)

Once you top with your layer of spinach, place the top on the crock pot and set the pot for 2 hours on low heat. After one hour, give it a stir with your spoon.

Then continue to cook for an additional 60 – 90 minutes. Serve up to friends and family – taking care to refrigerate leftovers.

Equipment

  • slow cooker (crockpot)

Ingredients

  • 8 oz fresh spinach
  • 14 oz artichokes 1 can
  • 8 oz cream cheese
  • 1 C sour cream
  • 1 C mozzarella cheese shredded
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt or, to taste

Instructions

  • Cut the artichokes into small bits, set aside. Then, cut the cream cheese in 8 pieces, set aside as well.
  • In the slow cooker, layer the ingredients. Start with the cream cheese, then top with the chopped artichokes, sour cream, mozzarella cheese, seasoning and finally, the spinach on top.
  • Set the slow cooker to low and let it cook for 2 hours. Make sure to stir after 1 hour to mix in the spinach.
  • Serve while warm with crackers, or bread.
