The Lava River Cave is just 30 minutes away from Flagstaff, Arizona. The cave itself was formed 700,000 years ago - at that time, molten lava erupted out of nearby Harts Prairie. The cave was founded in 1915 by lumbermen in the area.

These Gluten-Free Pumpkin Donuts with Sugar and Spice are the perfect treat to enjoy this fall – and so easy to make at home!

These Gluten-Free Pumpkin Donuts with Sugar and Spice are the perfect treat to enjoy this fall - and so easy to make at home!

Pretty soon it will be fall here in Phoenix. While many areas of the U.S. will enjoy beautiful, cool temps and prepping with winter jackets for nights in the 30’s or 40’s, right now it’s September and we’re still in the sweltering heat.

I know… it seems awkward to say I’m looking forward to enjoying fall when it’s still a bit warm during the day. Especially when we spend our days and nights in triple digits that seem like scorchers.

Pretty soon, we will be bringing out the Pumpkin Spice everything.

Enjoy your breakfast with a Gluten-Free Pumpkin Sugar and Spice Donut with a warm mug of Atole ~ so easy to make and better yet – you don’t have to drive anywhere.

Watch cartoons with the kids and eat donuts and drink warm mug drinks and you might just wish fall was all year long.

Wait.. that might just be my wish ;)

Mixing them up is quite easy.  I recommend having a large ziplock bag to help you pipe the donuts into a donut tin.

If you don’t have a donut pan, you’ll wonder how you ever lived without one…

We use ours to make these grain-free chocolate donuts for the kids every other week and they gobble them right up. They are SO easy!

The 2 pk of pans is a much better deal than buying a single plan – and will allow you to cook both pans at once so you can crank out 12 donuts in a matter of minutes. They clean up so easily, too.

Once the donuts are out of the oven, add the sugar and spice topping and enjoy every bit of your efforts!

You’ll love these donuts so much you’ll want to keep them a permanent part of your fall baking rotation. Right next to your Pumpkin Bread and your Pumpkin Cheesecake. that is! Yum!!

They will not disappoint!

Ingredients

Donuts:

  • 2 C gluten-free all-purpose flour
  • 1 C pumpkin puree
  • 1/3 C brown sugar
  • 1/4 C granulated sugar
  • 1/4 C milk
  • 1/4 C butter softened
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 2 eggs

Topping:

  • 1/2 C butter melted
  • 1/2 C sugar
  • 1 1/2 Tbsp cinnamon

Additional Materials:

  • 1 Gallon size ziplock bag to pipe donut batter into donut pan

Instructions

  • Preheat oven to 325 degrees F.
  • Combine all ingredients (excluding topping ingredients) in a medium sized bowl. Mix well and transfer batter into a gallon size ziplock bag. Snip off one corner of the bag, and pipe the donut batter into the donut pan – filling each approximately 2/3 full.
  • Bake for 14-17 minutes or until donuts are springy to the touch.
  • While donuts are baking, prepare the topping. Melt the butter in a bowl large enough for dipping the donuts. In a separate bowl or plate, combine the cinnamon and sugar.
  • Once the donuts are still hot, dip into the butter and then coat with the cinnamon and sugar mixture.
  • Donuts are best served fresh, but are still quite enjoyable for 1-2 days if kept in an airtight container.
  • Donuts can be frozen for up to 2 months. Simply place freshly baked donuts in freezer containers (skip the topping step!). When ready to eat, remove desired number of donuts and microwave for 1-2 minutes. You can then add the topping if you wish.
