A good hearty casserole is worth its weight in gold – agree? This cowboy casserole isn’t just hearty, it’s easy to put together and cooks up in the slow cooker for a meal that will fill up even the most barren of bellies.

Not only that, it combines common pantry ingredients and turns them into something that will be enjoyed by adults and children alike.

Open up that pantry and pull out your slow cooker – lasso the following ingredients to make this casserole come together:

  • diced tomatoes
  • corn
  • ground beef
  • red potatoes
  • kidney beans
  • hot sauce
  • diced onion
  • seasonings and spices

Mix up your ingredients thoroughly and pile in the slow cooker. Cook on high 3.5 – 4 hours, venting the lid to check for doneness – at that time, sprinkle your cheese on top and allow it to melt before enjoying.

  • sour cream
  • diced bacon
  • salsa
  • or more cheddar cheese

Slow Cooker Cowboy Casserole

Slow Cooker Cowboy Casserole is a rich, hearty casserole that's easily put together for massive flavor -- a great way to fill up a hungry belly on a shoestring budget!

Ingredients

  • 1 lb lean ground beef
  • 1/2 C sweet onion diced
  • 4-5 red potatoes sliced
  • 1 tsp garlic minced
  • 1/2 tsp ground cumin
  • 14.5 oz dark kidney beans drained and rinsed
  • 14.5 oz diced tomatoes
  • 10 oz frozen corn frozen
  • 1 Tbsp Cholla hot sauce or comparable hot sauce
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 C cheddar cheese sharp
  • 1/2 C beef broth

Instructions

  • Brown ground beef on the stovetop. Once almost done, add diced onions and cook until soft. Drain an excess fat. 
  • In a 6 quart slow cooker, add cooked beef & all ingredients EXCEPT the cheese. Stir ingredients well to evenly distribute spices. Once done, Cover and cook on high for approximately 3 to 3 1/2 hours, or until potatoes are tender. 
  • Remove lid, and sprinkle cheese on top. Cover with lid and cook for an additional 20 minutes, or until the cheese has melted.

Note:  There are lots of fabulous toppings you can add to your cowboy potatoes: bacon pieces, sour cream, cheddar cheese, and more.
