Peanut Butter Cookies

If you love a GOOD peanut butter cookie, we have a great one you can whip up – we have had some super deals on Peanut Butter lately so perfect time to put it to use!

We love ours SOFT and chewy, thick too – I’m not a fan of thin and crispy!  You’ll want to make sure you have these with a glass of milk.. they are absolutely amazing!

As with ALL cookies, I would recommend using a good butter – avoid using margarine, it’s just a poor choice for cooking AND baking. Using butter will always yield better results (and will taste better, too!)

Ingredients
  1. 1/2 C. Butter, Softened
  2. 1/2 C. Granulated Sugar
  3. 1/2 C. Brown Sugar
  4. 1/2. C. Creamy Peanut Butter
  5. 1 Large Egg
  6. 1 tsp Vanilla Extract
  7. 1 1/2 C. Flour
  8. 1 tsp Baking Soda
Instructions
  1. Cream butter & sugars in a stand mixer
  2. Add peanut butter, egg and vanilla - mix well
  3. Combine the flour, & baking soda - add to the butter mixture and mix just until combined
  4. Scoop dough onto the silicone lined baking sheets and bake for 10 minutes (just until set!)
  5. Allow your cookies to cool on the tray for 5-7 minutes before transferring to a wire rack
  6. Store in an airtight container
