Strawberry Coconut Sandwich Cookies

I have to admit, I don’t know what I love more — strawberries, coconut, or cookies..   Better yet, combine all 3 and you have the most delicious, addictive cookie around!

These strawberry coconut sandwich cookies really are SUPER easy to make. They come together with very little prep work and bake up quickly in 15 minutes. Not only are they addictive, they combine the ever-so-popular summer strawberry with flaked coconut stuffed between two soft, chewy cookies!

Follow the recipe below to make these yummy treats at home. They’d be perfect for a summer party or to give as gifts to family and friends!

Strawberry Coconut Sandwich Cookies

Gather up all of your ingredients – cookies and filling alike, to include butter, sugar, flour, milk, strawberry preserves, and more. Don’t forget the flaked coconut!

Whip up the cookies first by creaming together the butter and sugar with the egg and extracts. Once the dough is formed, separate into 1″ balls and push the balls down with the bottom of a glass dipped in flour. Bake for just 12-14 minutes before removing to cool.

While the cookies are baking, work on making the filling. Combine the butter with powdered sugar, milk, vanilla and coconut.  Spread the filling on the back side of the cooled cookie, then top with a dollop of strawberry preserves. Place another cookie on top (flat side facing down) and repeat until you have exhausted your filling.

Ingredients

Cookie Dough:

  • 3/4 C butter
  • 1/2 C granulated sugar
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/2 tsp almond extract
  • 2 C flour
  • 1/2 C flaked coconut
  • 1.5 tsp baking powder
  • dash salt

Filling:

  • 1/4 C butter softened
  • 1 C powdered sugar
  • 2 tsp milk
  • 1 tsp vanilla extract
  • 1 Tbsp flaked coconut
  • 1/3 C strawberry preserves

Instructions

Cookies:

  • In a large mixing bowl cream together the butter and sugar until light and fluffy.
  • Beat in the egg, vanilla, and almond extract until well combined.
  • In a separate bowl combine the flour, flaked coconut, baking powder, and salt.
  • Slowly add dry ingredients to creamed mixture and mix until well combined. 
  • Form dough into about 1 inch balls (30 total) and place onto baking sheets.
  • Use the bottom of a glass dipped in flour to press the dough down. If you have one with designs, use that!
  • Bake at 350 degrees for about 12-14 minutes.

Filling:

  • Combine the softened butter, powdered sugar, milk, vanilla, and coconut and mix until well incorporated.
  • Once cookies are done and somewhat cooled, add a dollop of frosting to it on the flat side of the cookie and spread.
  • Add about 1 teaspoon or more of strawberry preserves on top.
  • Place another cookies on top (flat side facing preserves) to make a sandwich and press down. Repeat.
