Cookie Dough:
- 3/4 C butter
- 1/2 C granulated sugar
- 1 egg
- 1/2 tsp vanilla extract
- 1/2 tsp almond extract
- 2 C flour
- 1/2 C flaked coconut
- 1.5 tsp baking powder
- dash salt
Filling:
- 1/4 C butter softened
- 1 C powdered sugar
- 2 tsp milk
- 1 tsp vanilla extract
- 1 Tbsp flaked coconut
- 1/3 C strawberry preserves
Cookies:
In a large mixing bowl cream together the butter and sugar until light and fluffy.
Beat in the egg, vanilla, and almond extract until well combined.
In a separate bowl combine the flour, flaked coconut, baking powder, and salt.
Slowly add dry ingredients to creamed mixture and mix until well combined.
Form dough into about 1 inch balls (30 total) and place onto baking sheets.
Use the bottom of a glass dipped in flour to press the dough down. If you have one with designs, use that!
Bake at 350 degrees for about 12-14 minutes.
Filling:
Combine the softened butter, powdered sugar, milk, vanilla, and coconut and mix until well incorporated.
Once cookies are done and somewhat cooled, add a dollop of frosting to it on the flat side of the cookie and spread.
Add about 1 teaspoon or more of strawberry preserves on top.
Place another cookies on top (flat side facing preserves) to make a sandwich and press down. Repeat.
