Easy Fresh Blueberry Bundt Cake

This has to be one of the BEST Blueberry Coffee Cakes I have made – kids love it, I love it, and hubby went wild!

Cheap Blueberries are on our list this week – if you picked some up, save 2 trays & make this super yummy cake in your Bundt Pan:

Ingredients
  1. 3 C. All Purpose Flour
  2. 1/2 tsp Baking Powder
  3. 1/4 tsp Baking Soda
  4. 1 C. Butter, Soft
  5. 2 C. Sugar
  6. 6 Eggs
  7. 1 C. Sour Cream
  8. 1 tsp Vanilla
  9. 2 Trays of Fresh Blueberries
Instructions
  1. Grease and flour the Bundt Pan generously - and set aside.
  2. Preheat the oven to 325.
  3. Use an Electric Mixer and mix the Butter, Sugar, Vanilla and Sour Cream just until blended.
  4. Add the Eggs, one at a time, and blend until combined.
  5. Add the Flour, Baking Soda, and Baking Powder, and blend until combined - do not overbeat!
  6. Fold in the blueberries by hand... keep back 12-15 blueberries.
  7. Sprinkle the 12-15 blueberries you kept back in the bottom of the Bundt pan, and then pour the rest of the batter on top - smoothing out the batter before you pop in the oven.
  8. Bake for 1 hour or until a knife inserted into the center comes out clean.
Notes
  1. The more blueberries the better! This is a relatively large cake - so use 2-3 trays. Once it's done baking, let it it rest, for 30-45 minutes, then gently give it a shake or turn upside down to take out.
  2. Combine 2 Tbsp of Milk with 1 - 1/2 C. Powdered Sugar, and drizzle on the top.
