Celebrate the season with these delicious cranberry crumb bars! They are easy to make and can be cut into mini squares for a party dessert tray.

Cranberries are soon going to be hitting the market around town the next few weeks.  Who doesn’t love those beautiful, brilliant hues of red?!

I love to stock up on them and toss the bags in my freezer (did you know they keep for a long time?) They are so handy to have in there, and when I need them I can just pull them out.

Easy Cranberry Crumb Bars

These cranberry crumb bars are the best way to use up bags of frozen cranberries. Plus, they work well if you have to bring a dessert to a friendly potluck. Cut these bars into squares and place them on a dessert tray. They will be gone in no time!

They are rich and delicious – always a hit no matter where we take them, and people always ask for the recipe.

Start by cutting 1 C. of cold butter into a mixture of all purpose flour and sugar, just until crumbly. Spread 3 C. of the mixture in the bottom of a glass 9×13 baking dish, then get to work on the filling.

Cranberry Crumb Bars

Combine the cranberries with sugar, some orange juice, and cornstarch and spread evenly on the crust. Then, top that filling with the remaining crumb for the top crust. You’ll want to make sure you have enough to spread out evenly to top the filling.

The bars will bake at 375 for approximately 45 minutes until they are golden brown – cranberry filling may ooze out from the middle layer.  Wait for them to cool, then cut them into small bars, or even further into mini bars.

While you can refrigerate any leftovers for up to a week, in most cases the leftovers won’t last that long.

They are just that delicious!

Ingredients

Crust:

  • 2.5 C all purpose flour
  • 1 C granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 C unsalted butter cold
  • 1 egg
  • 1/4 tsp ground cinnamon

Filling:

  • 4 C cranberries 1 bag, frozen or fresh
  • 1 C granulated sugar
  • 4 Tbsp orange juice or juice of 1/2 orange
  • 1 Tbsp cornstarch
  • 1 tsp vanilla extract

Instructions

  • Heat oven to 375 degrees F. Generously grease a 9x13 glass baking dish.
  • In a medium bowl, combine the flour, sugar, baking powder & salt. Cut in the butter until mixture looks like coarse crumbs. Add the egg - blend well.
  • Press 3 C of the mixture in the bottom of the 9x13 glass baking dish, reserve the rest for the topping.
  • Preparing the filling by mixing the cranberries with the sugar, orange juice, cornstarch and vanilla. Pour evenly over the crumb crust. Then sprinkle the remaining crumb mixture over the filling, making sure to cover the filling completly.
  • Bake at 375 degrees F for 45 minutes - remove and let cool before cutting into squares.

Notes

Cranberries do not need to be cooked. They will cook in the oven.Do not use cranberry sauce or jellied cranberries. They must be bagged, whole cranberries (frozen or fresh).
