Mole (pronounced moh-lay, is a rich, fragrant sauce that is usually associated with Puebla or Oaxaca, Mexico. 

There are so many varieties of mole available today – and historically, mole is very labor intensive and requires a huge list of ingredients.  In my husband’s family, there is no official recipe for mole because each woman has her own way of making her own.

For many years, my father in law always relied on his sister for (what he called) “the best” mole – made with 50+ ingredients and simmered for hours upon hours on the stovetop.

Instant Pot Mole with Turkey

Mole can include everything from lard to sugar, cinnamon, cloves, plantains, peanuts, chiles, tomatoes, & cocoa. It can even include bittersweet chocolate, and even chipotles. Each Mexican woman has her own mole recipe, usually passed down from her family. It’s usually always made in large batches since it is so time consuming. 

My mother in law often talks about walking back home from the molinos with buckets of mole for a fiesta.  It is by far one of the most delicious meals, and one that I don’t make as often as I would like.

We have made several varieties of mole over the last few months.  I found a new recipe from Maria at An Eclectic Mind and figured we would try it since we had everything here at home.

Instant Pot Mole

This Instant Pot Mole is incredible!  We substituted turkey for the chicken and left out the cloves.  You can taste the deep flavor of raisins and cocoa in this mole, balanced by the kick of the pepper. It’s a great way to use up leftover turkey or chicken and even better the next day after allowing the flavors to blend even more.

This Instant Pot Mole doesn’t take lots of time like you would expect from traditional mole.  After helping the kids get started on homework I started this mole just after 5 pm.  Within 30 minutes it was done & ready to eat.

The house smelled incredible, and the Instant Pot was keeping the mole warm until everyone was able to sit down together.

If you don’t have rotisserie chicken or cooked turkey to use up, you can use chicken breasts.  If you do, you will want to increase the cooking time to 25 minutes.  Then shred the chicken in the sauce to let the flavors blend a little more.

Instant Pot Mole with Turkey

Equipment

  • Pressure Cooker

Ingredients

  • 3 Tbsp extra virgin olive oil
  • 2 Tbsp cocoa unsweetened
  • 2 Tbsp chili powder
  • 3 garlic cloves minced
  • 3 tsp minced canned chipotle sauce
  • 1/4 tsp ground cinnamon
  • 2 C chicken broth
  • 14.5 oz diced tomatoes
  • 1/4 C peanut butter smooth and creamy
  • 1 C raisins
  • 1 tsp salt or more to taste
  • 1/4 tsp pepper
  • 2-3 C turkey
  • 1 onion sliced thin

Instructions

  • Add the vegetable oil to the instant pot and push saute.
  • Add the onions and saute until soft, 3-4 minutes.
  • Remove the onions with a slotted spoon and set aside in a separate dish.
  • Add 2 more Tablespoons of extra virgin olive oil to the Instant Pot and push the saute feature a second time.
  • Add the chili powder, cocoa, garlic, chipotle, and cinnamon and cook for 30 seconds - it is going to smell very fragrant.
  • Stir in the broth, tomatoes, raisins and peanut butter and scrape down the sides and on the bottom of the pot to ensure you incorporate all the ingredients.
  • Continue with the saute function and allow the ingredients to simmer in the instant pot for about 2-3 minutes.
  • Remove the sauce and pour it into your blender (or, use your immersion blender) and puree it until smooth.
  • Pour the sauce back in your Instant Pot and add in the turkey. Then, grab the onions you set aside and dump those in, too.
  • Mix well, then place the lid on the Instant Pot and close the valve (seal).
  • On the Instant Pot, push manual (high) then set the timer for 15 minutes.
  • When the timer beeps, allow the pressure to release naturally for 10 minutes, then do a quick release on remaining pressure.
  • Season with salt & pepper, and serve as is with tortillas or with rice.
