- 1 Tbsp olive oil
- 1 lb ground turkey
- 1/2 C sweet onion, diced
- 15 oz black beans drained and rinsed
- 15 oz corn drained
- 15 oz diced tomatoes
- 1 C chunky style salsa
- 4.5 oz green chiles, chopped drained
- 1 Tbsp taco seasoning mix
- 10 oz mild red enchilada sauce
- 16 oz frozen tater tots
- 2 C shredded cheddar cheese
Heat olive oil in a large skillet over medium high heat. Add onions and sauté for 3-4 minutes or until soft. Then add in ground turkey. Cook until no longer pink. Once done, remove from heat and set to the side.
In a large bowl, add black beans, corn, salsa, green chilies, tomatoes, taco seasoning, enchilada sauce, and cooked ground turkey. Stir to mix ingredients well.
Spread half of the tater tots onto the bottom of the slow cooker; top with ground turkey mixture. Layer 1 cup of cheese on top, and finish with remaining tater tots.
Cover and cook on Low heat for 5-6 hours or High heat for 3-4 hour. Add cheese during the last 30 minutes of cooking time.
