Caramelized Pecan and Sea Salt Fudge

Ingredients

  • 1 C granulated sugar
  • 1/2 C water
  • 1 tsp sea salt divided
  • 3 C miniature chocolate chips
  • 14 oz sweetened condensed milk (1 can)
  • 20 pecan halves

Instructions

  • In a small saucepan over medium heat, stir together the sugar, the water, and half a teaspoon of sea salt until dissolved.
  • Let this syrup cook without stirring until a rich golden color, then remove from heat.
  • Line a baking sheet with parchment paper. Dip each pecan half in the caramel (or toss all together in a bowl). Put the individual pecan halves on the baking sheet and let cool until hardened.
  • Melt the chocolate chips with your method of choice (double boiler, microwave).
    Stir together the melted chocolate, condensed milk, and the rest of the sea salt. Pour into an 8 x 8 baking pan lined with parchment and smooth out the top.
  • Press pecan halves in rows and columns (here I used 4x5) making it the center of each piece. Garnish with a bit more sea salt if desired.
  • Let rest until set, chilling in the fridge if in a hurry. Slice the fudge into squares and serve.
