Kahlua Caramel

Ingredients

  • 1 C granulated sugar
  • 1/4 C corn syrup
  • 1/3 C heavy cream
  • 3 Tbsp butter
  • 1/3 C Kahlua

Instructions

  • Combine sugar and corn syrup in a heavy saucepan. Heat to medium; stir the mixture until the mixture boils then stop stirring. The solution will go from clear to amber yellow - at this point, begin to stir again, and watch the color carefully. It will turn from amber yellow to golden brown and continue to darken. Continue to heat until the solution is your desired color (golden brown or dark brown - your choice).
  • Remove from the heat.
  • Add heavy cream - the mixture will bubble up double the size. Stir in the cream vigorously until combined.
  • Once cream has been stirred in, add the butter and continue to stir until combined.
  • At this point, you'll want to add in the Kahlua - for less liquor flavor, add the Kahlua while the mixture is still hot (this will burn off the alcohol). For more Kahlua flavor, allow the mixture to cool slightly before adding the Kahlua. Stir until combined.
  • Pour into glass jar and top with lid and ring. Store in refrigerator. Sauce will harden when refrigerated. Gently microwave to loosen caramel for syrup on ice cream, pancakes or waffles.
