Jalapeno Cheddar Cornbread Casserole

Ingredients

  • 8 oz cornbread mix
  • 15 oz can corn
  • 14.75 oz can cream corn
  • 1 egg
  • 2 Tbsp butter melted
  • 4 strips bacon cooked and chopped
  • 1 jalapeño seeds removed, finely chopped
  • 1/2 C shredded cheddar cheese

Instructions

  • Preheat the oven to 400 degrees F.
  • Stir together the cornbread mix, corn, cream corn, egg, and butter until well combined.
  • Fold in the bacon, jalapeño and cheddar cheese.
  • Spray a 9x9 casserole dish with non-stick cooking spray and spread the mixture evenly in the pan.
  • Bake for 25-30 minutes, or until the center of the casserole is set.
  • Allow to cool slightly before enjoying.

Notes

 
Recipe can be doubled and baked in a 9x13 casserole dish for an additional 5-8 minutes.
