Ingredients

  • 3 lb red potatoes diced
  • 1 Tbsp ranch seasoning
  • 1 tsp salt
  • 1 tsp black pepper
  • 4 Tbsp butter thinly sliced
  • 12 oz frozen corn
  • 6 strips bacon cooked and chopped
  • 2 C shredded cheddar jack cheese

Instructions

  • Spray the bowl of the slow cooker with nonstick cooking spray and set aside.
  • In a large bowl, toss the red potatoes with the ranch seasoning, salt, and pepper.
  • Spread half the potatoes in the bottom of the slow cooker.
  • Top the potatoes with half the butter, half the corn, half the bacon, and half the shredded cheese in that order.
  • Add the remaining potatoes, butter, corn, bacon, and shredded cheese in layers.
  • Place the lid on the slow cooker and set to cook on high for 4 hours or low for 6 hours.
