Bailey's Irish Cream Chocolate Chip Cookies

Ingredients

  • 1/2 C unsalted butter room temperature
  • 2/3 C brown sugar
  • 1 C granulated sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 1/2 C oats
  • 2 C all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 12 oz Bailey's Chocolate Chips

Instructions

  • In a large mixing bowl combine butter and sugars and cream until light and fluffy.
  • Then add eggs one at a time and mix until well combined.
  • Add in the vanilla and mix again.
  • Add in the oats, flour, baking soda, and salt and continue  to mix until all ingredients are combined.
  • Fold in the Bailey's Chocolate Chips. Chill dough for about at least 10 minutes before rolling into 2 inch dough balls.
  • Place cookie dough balls onto a cookie sheet and bake in batches at 350 degrees for about 12-14 minutes.
