Instant Pot Fried Rice

- 1 C white rice
- 1 C frozen peas and carrots
- 4 Tbsp soy sauce or substitute coconut aminos
- 1 Tbsp sesame oil
- 1.5 C water
Add rice, vegetables, and water to the instant pot.
Place lid on pot.
Set valve to the sealed position. Press the pressure cook or manual button and set time to 7 minutes.
Open pot and add in soy sauce or coco aminos. Then add in sesame seed oil. Fold rice until sauces are incorporated.
Note: If you would like to add egg you can whisk one and microwave it and add it to the rice. Can also be topped with sesame seeds.
